Jeotgal (Korece: 젓갈) veya jeot (Korece: 젓 ), (çevirisi tuzlu deniz ürünleri), karides, istiridye, deniz tarağı, balık ve havyar gibi deniz ürünleriyle yapılan, korunmuş tuzlu yemekler kategorisidir.Jeotgal içeriğine bağlı olarak yumuşak, katı parçalardan berrak, et suyu benzeri sıvıya kadar değişebilir.

Katı jeotgal genellikle banchan (yan yemekler) olarak yenir. Üç Kore Krallığı'nda fermente gıdalar yaygın olarak bulunabiliyordu, 289'da yayınlanan bir Jin Hanedanlığı tarihi metni olan Üç Krallığın Kayıtları gibi, Wei Kitabı'nın Dongyi başlıklı bölümünde Koguryo Korelilerinin şarap, soya fasulyesi ezmesi, tuzlanmış ve fermente edilmiş balık gibi fermente gıdalar yapma konusunda yetenekli olduklarından bahseder.Jeotgal'in ilk Kore kaydı, Samguk Sagi'de, Kral Sinmun'un 683'te düğün hediyesi olarak pirinç, şarap, ve jeotgal sunduğuna atıfta bulunarak ortaya çıkmıştır. 1124'te, bir Çinli Song Hanedanlığı elçisi, jeotgal'ın Koryo'da beğenildiğini yazdı. Joseon edebiyatında yazılan 16. yüzyıl günlüğü olan 'de yirmi dört jeotgal türü yer almaktadır. 180'den fazla jeotgal türü, ve 16. yüzyıl kitaplarında; , ve 17-18. yüzyıl kitaplarında bulunabilir.
