William Thomas Astbury (d. 25 Şubat 1898, ; ö. 4 Haziran 1961, Leeds), İngiliz fizikçi ve moleküler biyolog.
Keratin üzerine yaptığı çalışmalarıyla tanıldı. Ayrıca DNA yapısı ile ilgili çalışmalarıyla DNA yapısının açıklaması için ilk adımları attı.
Astbury, Longton'da yedi çocuğun dördüncüsü olarak doğdu. Liseden sonra burslu Cambridge Üniversitesinin Jesus College'ine gitti. Cambridge'de iki dönem okuduktan sonra, I. Dünya Savaşından dolayı eğitimini yarım bıraktı. Sonradan Cambridge'e geri döndü ve eğitimini tamamladı.
1928 yılında, Astbury Leeds Üniversitesinde lifli proteinlerin yapısını, özellikle bir yün bileşeni olan kreatinin yapısını tekstil sanayi desteği ile araştırdı.
Astbury yaptığı çalışmaları için birçok ödül aldı.
